HEALTHIFIED FIG NEWTONS
Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Makes 9 thin squares (8x8 pan) or 6 thick squares (loaf pan)
INGREDIENTS
For the crust:
2 cups oat flour
1 cup old-fashioned rolled oats
1 cup unsweetened applesauce
2 tbsp coconut flour
1 1/2 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
For the filling:
2 cups dried figs
1/4 cup water
1/2 lemon, juiced
1/2 tsp cinnamon
DIRECTIONS
Preheat oven to 350F. Lightly spray a loaf pan with coconut oil and line with parchment paper.
In a food processor, combine all crust ingredients until a few whole oats remain in your crumb. Add half of the filling mixture into the pan and spread to cover the entire base. Set aside other half.
Again using the food processor, add the filling ingredients. Pulse to combine until a smooth paste forms. Spread filling on top of crust layer (it helps to spread with hands). Top with leftover crust mixture.
Bake for 25 minutes, until a toothpick inserted comes out clean.
