Healthified Fig Newtons

Like the fig newtons you had as a kid, but 1000 times better and better for you!

Thanks to @itstaylermarie and @realfoodwithjessica and for the OG recipes that inspired this one. In 30 minutes, you can have a sweet and healthy snack that will make your house/lunchbox/tupperware smell amazing.

HEALTHIFIED FIG NEWTONS

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

Makes 9 thin squares (8x8 pan) or 6 thick squares (loaf pan)

INGREDIENTS

For the crust:

2 cups oat flour

1 cup old-fashioned rolled oats

1 cup unsweetened applesauce

2 tbsp coconut flour

1 1/2 tsp cinnamon

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt


For the filling:

2 cups dried figs

1/4 cup water

1/2 lemon, juiced

1/2 tsp cinnamon


DIRECTIONS

  1. Preheat oven to 350F. Lightly spray a loaf pan with coconut oil and line with parchment paper.

  2. In a food processor, combine all crust ingredients until a few whole oats remain in your crumb. Add half of the filling mixture into the pan and spread to cover the entire base. Set aside other half.

  3. Again using the food processor, add the filling ingredients. Pulse to combine until a smooth paste forms. Spread filling on top of crust layer (it helps to spread with hands). Top with leftover crust mixture.

  4. Bake for 25 minutes, until a toothpick inserted comes out clean.
